Shavano was born from a desire to showcase the incredible bounty of Colorado and the greater Mountain West.

We draw inspiration from the small, family-run restaurants of Europe—places where vibrant community, soulful food, exceptional wine, and warm hospitality naturally come together. After many years immersed in food and wine, a seven-year hiatus brought me back to the industry with a fresh philosophy: great food should not only taste extraordinary, it should also nourish the land, the community, and the body.

That vision comes to life each day with the talent of our Head Chef, Jesse Rogers—formerly of The Broadmoor in Colorado Springs and Dunton Hot Springs in the San Juans—alongside our dedicated team. Together, we’ve created something we’re proud to call a true gem in Salida, Colorado.
